Flavour creams and custards with Terre Exotique Bourbon vanilla pods. Madagascan vanilla has a complex flavour with fruity, chocolatey notes. It adds subtle sweetness to all kinds of baked goods and desserts.

Split the pods lengthways and use the tip of a knife to remove the oily seeds. The seeds can be added directly to cake batter and cookie dough. For delicate sauces and custards, the seeds can be strained away before serving.

Vanilla is the key flavouring in desserts like crème brûlée. The warm, sweet flavour works beautifully in crumbles and ice cream. Try adding a bruised pod to a pan of poached pears. It will impart its delicate flavour to the sweet syrup.

Use the empty pods to infuse milk and caster sugar.
