This lemon olive oil is inspired by a history of olive oil production. In Abruzzo in central Italy, lemons were traditionally used to de-grease olive millstones. The oil obtained at the end was not for sale, but extremely fragrant. It was often used by the producing family. From there it became so popular that lemon-flavoured oils started to be intentionally produced.

Drizzle this lemon olive oil over roast chicken and vegetables to add light, summery flavours. When frying fish and meat, this oil adds a gentle zing that complements but doesn't overpower. It works wonderfully in salad dressings and vinaigrettes.
