Organic juniper has a fruity, pine-like flavour. It’s the key flavouring in gin and can be used in all sorts of savoury recipes. You will also find it in game dishes, such as stews and ragu.

Add juniper berries to a G&T or a herby marinade for lamb chops. Their tart flavour is a great match for rich meats like duck and wild boar. Juniper is also used in pickles and ferments, such as sauerkraut.

For an extra special supper, add juniper berries to venison ragu. Simmer it slowly with herbs and red wine until the meat is meltingly tender. Serve your ragu with silky tagliatelle and top with a shower of parmesan.
