Michele Portoghese Orecchiette, 500g

Orecchiette is a small, ear-shaped pasta from southern Italy. In Puglia, it’s often paired with sausage, garlic and friarelli. Traditionally shaped by hand, orecchiette has a concave centre that traps sauces. Once cooked, they have a satisfying firm texture.

Serve orecchiette with a tomato sauce flavoured with garlic and chilli. If you don’t have any Parmesan, top your pasta with crispy breadcrumbs, as they do in Puglia. Orecchiette is also delicious with creamy sauces and walnut pesto.

Michele Portoghese uses traditional pasta making methods passed down through generations. Extruded through bronze and slowly dried, their pasta has a slightly rough texture. This helps sauces to cling to the surface, so each bite is as delicious as the last.
