Oak wood dust is most widely used in commercial smoking, thanks to the strong smoky aroma it gives food, which works on many ingredients. The aroma is wonderful with sausages, or blended with cherry for smoking turkey. The popular wood dust is enormously versatile though, and produces a heavily smoky flavour which is also great with all red meat, heavy game and pork.
