These confit figs are steeped in a light sugar syrup flavoured with Marc de Cava, a type of Spanish brandy. Marc de Cava is made from the double distillation of Macabeo grapes, one of the main grape varieties used in Cava production. The plump figs are beautifully soft with a rich, honeyed fruitiness.
With their subtle brandy flavour, the black figs are delicious served simply with clotted cream or vanilla ice cream. If you’re feeling more ambitious, you can use them in frangipane tarts or to garnish a creamy cheesecake or panna cotta. For added indulgence, pair your dessert with a glass of chilled dessert wine.
